Manly Man Breakfast Hash

In response to Kevin S (the classic)'s recent blog post, I am posting a new favorite Paleo-friendly recipe that has been a fan favorite at the Gizzi household over the course of the last few weeks...

Hash ingredients:
1 cup cubed sweet potato
1 cup diced onions
1 cup diced red pepper (optional)
1 TBSP coconut oil


The meat...
1 lb grass-fed ground beef
6 slices bacon
6 eggs
1 avocado, sliced
Chalula (optional)

Combine all hash ingredients in saucepan and cook over medium-high heat until potatoes and onion are soft and are slightly browned.


At the same time you start hash, cook bacon until desired wellness.  Set aside or chop up and add to hash.  Brown 1 lb of grass-fed ground beef ($4.99/lb at Trader Joes). In separate pan or after you've cooked meat, cook eggs to your liking in a dash of coconut oil... I prefer over-medium.

Then... start the layering process:
Place a cup of hash, layer with ground beef, then bacon, then eggs, then avocado... finish off with a dash of hot sauce if that's your thing.

I have modified this a few different ways to include leaving out the ground beef or adding cubed ham or breakfast sausage in its place.  It seems like a lot of work, but if you have some sweet potatoes and onions prepped, it's a 20 minute process... and well worth it!
