Quick and Easy Breakfast

I will always tell people who are changing their nutrition profiles to start with one meal a day if they are hesitant or not completely committed.  Start with breakfast and pay attention to how you feel after.  This is usually enough to get people to make more permanent changes.

As fun as cooking healthy can be, we don't always have more than a few minutes.  Meet chicken sausage.  This brand is at CostCo, very affordable.. and minimal ingredients with minimal processing.  Heat this up with or without a few eggs, add some avocado and you have a good start to face the day!



Staple breakfast that takes less than 5 minutes!

Manly Man Breakfast Hash

In response to Kevin S (the classic)'s recent blog post, I am posting a new favorite Paleo-friendly recipe that has been a fan favorite at the Gizzi household over the course of the last few weeks...

Hash ingredients:
1 cup cubed sweet potato
1 cup diced onions
1 cup diced red pepper (optional)
1 TBSP coconut oil


The meat...
1 lb grass-fed ground beef
6 slices bacon
6 eggs
1 avocado, sliced
Chalula (optional)

Combine all hash ingredients in saucepan and cook over medium-high heat until potatoes and onion are soft and are slightly browned.


At the same time you start hash, cook bacon until desired wellness.  Set aside or chop up and add to hash.  Brown 1 lb of grass-fed ground beef ($4.99/lb at Trader Joes). In separate pan or after you've cooked meat, cook eggs to your liking in a dash of coconut oil... I prefer over-medium.

Then... start the layering process:
Place a cup of hash, layer with ground beef, then bacon, then eggs, then avocado... finish off with a dash of hot sauce if that's your thing.

I have modified this a few different ways to include leaving out the ground beef or adding cubed ham or breakfast sausage in its place.  It seems like a lot of work, but if you have some sweet potatoes and onions prepped, it's a 20 minute process... and well worth it!
